Bar Graph, Charts and Tables
for You to Print

I'm partial to the bar graph because it spares so many words. Any one of these graphs, images or charts would be useful to run off and tape inside a cabinet door in your test kitchen. Here's one on how to cook fish. A really useful chart for shopping is this list of spices with a column for you to check against your supply before going to the grocers.

Smoking Points for Fats

The smoking points of oil gives you some idea of which oil to use for which purpose. Here's a useful diagram comparing saturated v. unsaturated fats and how they act in your arteries later. The oils to the left will not take too much heat without smoking or even catching fire. The ones to the right will take higher temperatures. Vegetable oil is a really good that for your highest cooking temperature needs. Olive oil generally does very well with stir fries. In general, the lighter the oil -- just look at the color, the higher the temperature can take.

If you've never tried it, you might want to buy some ghee. Ghee is widely used in Indian cooking and the flavor is excellent. It does not readily burn because all the milk solids have been removed. In fact, it's a lot like clarified butter without the aggravation. It keeps very well in the refrigerator.

This chart that shows marinating times for different proteins is a general guide that illustrates that the more delicate the flesh of the protein, the less time it will take to marinade. In fact, ceviche is a Peruvian dish in which the fish is "cooked" in lime or lemon juice without ever going near the heat.
