Every omnivore's favorite chant, maybe, "Beef- It's What's for Dinner." Beef offers a lot of iron for those of us who need it. Once a week red meat isn't going to hurt.

Chuck steak is a nice lean cut, too, and won't pack on the calories. Cooked slowly, it can be very tender. I like to do chuck roast in the crock pot.
The Greek marinade, with its subtle cinnamon overtone, and the sweet and tang of the tomato, is a good way to prepare the roast before selecting a sauce.
