Cocktail Sauce Recipe
The “C” sauces
Chinese Garlic Sauce, Cheese Sauce Recipe, Chipotle Sauce, and Carbonara Sauce

For the home cook, I take conventional recipes and reduce the ingredients as much as possible without sacrificing the intent.

For instance, without naming brands, there are very nice bottled chipotle pepper sauces that keep just about forever in the fridge. You add the creamy yogurt and mayo, and off you go. Why start with dried peppers? The site, after all, is called Formula Easy Recipes. You can probably find more complicated recipes, but for home cooking, these will do well. I never add “salt and pepper” because you should always use these to suit yourself. This is, after all, a test kitchen.

Cocktail Sauce Recipe for Shrimp              

0.50 cup catsup
0.50 cup horseradish
1.00 tablespoon lemon juice

Curry             

0.25 cup chopped onion
1.00 whole garlic, minced
1.00 tablespoon butter
1.00 teaspoon curry powder
1.00 teaspoon ginger, ground
2.00 teaspoon flour
0.50 cup chicken stock
0.50 cup yogurt

              

Chinese Garlic Sauce              

1.00 tablespoon rice wine vinegar
1.00 dash cayenne
1.50 teaspoon cornstarch
2.00 tablespoons rice vinegar
2.00 tablespoons soy sauce
2.00 tablespoons sesame oil
4.00 whole garlic, chopped

              

Cheese Sauce

2.00 tablespoon butter
2.00 tablespoon flour
1.00 cup milk
1.00 cup swiss or cheddar, grated


Carbonara Sauce              

4.00 tablespoons butter
8.00 slices pancetta
2.00 each eggs
2.00 each egg yolks
1.00 teaspoon hot pepper flakes
1.00 cup parmesan cheese
0.50 cup heavy cream
4.00 tablespoons butter

              

Chasseur Sauce             

4.00 tablespooons butter
2.00 whole shallot, chopped
0.25 whole mushrooms, thinly sliced
1.00 cup white wine
2.00 cups brown sauce
2.00 tablespoons tomato paste
1.00 tablespoon parsley, chopped
0.75 teaspoon tarragon

              

Colbert Sauce             

2.00 cup shallots
2.00 tablespoon butter
0.25 cup red wine
1.00 cup demi-glace
1.00 tablespoon lemon juice
0.50 teaspoon tarragon

              
             

Chipotle Sauce      

0.75 Cup yogurt
0.25 Cup mayonnaise
2.00 Teaspoon chipotle pepper sauce, bottled
