Lamb Meat

Lamb meat lies outside the average American diet, but in the Mediterranean area, especially the Middle East, it's extremely popular. It lends itself well to the use of herbs and spices. Very versatile!

Middle Eastern Style
Amount	Unit	Ingredient
0.25	cup	chopped cilantro
0.25	cup	lemon juice
2.00	whole	peeled, chopped potatoes
3.00	cups	black lentils
6.00	cloves	crushed garlic
0.25	cup	flour

Put the chopped potatoes into water immediately and squirt a wedge of lemon (or better yet, apple vinegar) in the water to prevent browning. Put the potatoes and the lentils in a large pot and just cover with water. Bring those two ingredients to a boil and cook until both soften. Remove about a half cup of the liquid and cool it to room temp, then whisk (completely) the flour in there to make a smooth liquid. Slowly drizzle that liquid into the pot, stirring, until the mixture thickens. Add the remaining ingredients.

Serve this underneath the lamb chops for presentation. If you like, you can try one of the following sauces on top of the with lamb meat but it is optional. I would not add a sauce in addition to the potato/lentil mixture. Rice is always good as an accompaniment to lamb chops. A dollop of mint jelly on the side with a mint garnish would be nice.

If you have leftover leg of lamb, cut it into cubes and add at the end of the cooking of the potato/lentil mixture just to heat through.
