Steak Marinade Recipe

Here's a nice, easy steak marinade recipe
Two, actually. Oh, and a rub if you prefer that.

Steak an 1.5 thick!Hot Cajun rub with Cooling Citrus Sauce

The steak marinade recipe here is a citrus style with Jamaican jerk which is good for a grilled shrimp marinade also. This is your test kitchen so why not try it with steak, chicken and fish?





Cajun Style Rub

1 teaspoon dry thyme leaves
1 teaspoon oregano leaves
1.5 teaspoons ground white pepper
2 teaspoons cayenne
2 teaspoons garlic powder
2 teaspoons onion powder
0.25 cup paprika


California Style Marinade

0.25 cup red onion, sliced
2 teaspoons juice of lime
0.5 teaspoon sugar
1 teaspoon jalapeno, thinly sliced
1 cup unripe mango, grated
3 teaspoons minced cilantro
3 teaspoons minced green onion
3 teaspoons Thai fish sauce
0.25 cup roasted peanuts

Citrus Style Marinade

0.25 cup sliced green onions
0.5 cup frozen orange juice concentrate, thawed
2 cups chicken broth
2 teaspoons finely shredded orange peel
2 teaspoons oranges, peeled, sliced, and seeded
2 teaspoons red grapefruit, peeled, sliced, and seeded
2 cloves garlic, minced
3 cups hot cooked rice
3 teaspoons Jamaican jerk seasoning
4 teaspoons cornstarch
0.25 cup red wine vinegar
8 whole green onions
