Ground Turkey Stuffing Recipes and Turkey Meatballs

Ground turkey stuffing recipes for a lo-carb diet and two dinners for the effort of one.

Sauerkraut Balls with Ground Turkey

First, we'll make some turkey meatballs, and with the leftovers, we'll stuff bell peppers.
It's hard to find tasty dishes for ground turkey, isn't it? Turkey can be very bland.

However, it's a dieter's best friend (next to fish or vegetarian). I started with a recipe for sauerkraut balls and changed three ingredients, adding two, and adapting it to the lo-carb diet.

I substituted almonds, ground to the consistency of cornstarch(unseasoned) for the flour - it gives a nice crunch and avoids the white flour which is anathema to a lo-carb diet.

Preheat oven to 350 degrees F

*Note - these meatballs make a nice appetizer, too. Serve withHollandaise, skewer with toothpicks.

A 2 pounds ground turkey
B .5 cup butter, melted
C .25 cup olive oil
D 2 medium onions (minced)
E 2 tablespoons parsley (minced)
F 2 teaspoons dry mustard
G 2 cups milk
H 2 teaspoons cumin
I 2 cups almonds, unseasoned,ground like cornstarch
J 1 teaspoon pepper flakes
K 2 whole eggs, beaten with a fork
L 2 cups sauerkraut, well drained


Get your hands in there and mix that mass up from A through J.Now add the sauerkraut, almost dry, and mix some more.To speed up making the meatballs, press the mixture into a shallow pyrex dish to about one inch, and, using a tulip shaped champagne glass, press and turn for perfect size rounds. Use a tablespoon to lift the cutout parts to a tray. Now roll the meatballs between your palms to firm them up.

Dust - very lightly - with a little Wondra flour and paprika for color. Now dip in the mixed egg mixture and bake at 350 for about 25 minutes (check inside one at 20 minutes).

You will probably have some leftover turkey mixture


Great!

Roast bell peppers until charred black at 450 degrees. Put them in a plastic bag tied tightly and leave them alone until room temp. Remove the peel, and clean inside - don't break the pepper open, though, you'll need the "pocket."

Stuff with the leftover turkey mixture and bake for 30 minutes - check inside one at 25 minutes.

If you have leftover whole turkey, you can put it in the food processor and reduce the time to roast in the oven because the turkey is already cooked.
